Delicious Oat Muffin Recipe


These are so good. If I was still having my 'snacky cake' cravings, these fantastic muffins would definitely take care of them!

Ingredients:
- 3/4 cup of oats
- 1 cup of buttermilk
- 1 1/4 cup of white whole wheat flour OR whole grain flour
- 1 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/3 cup of canola oil
- 1 egg
- 1/3 cup of brown sugar substitute (sugar free)
- 1 teaspoon of vanilla

In a small bowl, combine the oats and the buttermilk. Let soak for 30 minutes.
Meanwhile, preheat the oven to 425○ F.
Coat a 12-cup nonstick muffin pan with either cooking spray or paper cups.
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
In a large bowl, mix the oil, egg, brown sugar, and vanilla until well blended.
Stir the oat mixture (after it has soaked for 30 minutes) into the large bowl.
Then stir in the flour mixture until just combined. Do not overmix.
Divide the batter evenly throughout the muffin cups. filling about 2/3 full. Bake for 11-15 minutes.
